12 Days of Christmas Cookies: Snickerdoodles

So, this is the first cookie of what I hope will be a recurring tradition of holiday cooking baking. I wanted to start off a little easy, since I’ve never baked any of the cookies I have on my list before this year. These snickerdoodles are definitely going to become a household favorite. 


Snickerdoodles
 These cookies are soft, chewy, and irresistible. (I had to physically restrain J to keep him from eating the entire batch!) Bake for exactly 8 minutes, and make sure your cream of tartar and baking soda are fresh!

Ingredients
1/2 cup butter, softened
1/2 cup non-hydrogenated vegetable shortening like Spectrum Natural’s Organic Vegetable Shortening
1 1/2 cups white sugar
2 eggs, lightly beaten
2 teaspoons vanilla extract
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons white sugar
2 teaspoons ground cinnamon

Directions
1. Preheat oven to 400 degrees F (200 degrees C).
2. Cream together butter, shortening, 1 1/2 cups sugar.
3. Beat in the eggs and the vanilla
4. Sift in the flour, cream of tartar, soda and salt.
5. Place the remaining sugar in a small bowl. Place the cinnamon in a small bowl.
6. Shape dough by rounded spoonfuls into balls.
7. Roll balls of dough in the sugar. Then roll the dolls in the cinnamon.
8. Place 2 inches apart on ungreased baking sheets.
9. Bake 8 minutes, or until set but not too hard. Remove immediately from baking sheets.
